I didn't realize that they were played by such a professional orchestral group. On You Tube there is a video of an orchestra playing Aeris (or Aerith's) theme.

The music from FF7 and most other FF games was composed prettymuch entirely by Nobuo Uematsu. Because the songs are so beautiful, many symphony orchestras perform the songs. Typically, the conductor or someone else will arrange the song to transition it from one medium to another. Obviously the songs on FF1 for the NES aren't actual recordings of an ensemble performing the song. It's an arrangement of Uematsu's work using the technology that was available. When you hear an orchestra performing the song, it's often slightly different, note for note.

Uematsu himself does perform his songs live with his band "The Black Mages". I believe he plays keyboard, and is accompanied by a drummer, bassist and guitarist, but I'm not sure.

I think he plays the organ and is accompanied by a keyboard player, a bassist and 1 or 2 guitarists but like you im not sure

The songs were created by some dude* with a synthesiser. He just happens to conduct the orchestras commissioned to play them in concert.

He also stands backstage giving The Black Mages his blessings... or was he keyboardist? I forget.

*Nobuo Uematsu. I apologise for reffering to him as "some dude"; I find him somewhat legendary, along with Daisuke Ishiwatari and Masato Nakamura before Sega became corrupt and started accusing random websites of copyright infringement. The "some dude with a synthesiser" was to point out who and what composed the music.
