Which is the best version for somebody who has never played the game before? And more specifically, which one is better, the PSX or the GBA version? Or maybe the SNES one? I'm asking this because I want to beat the game before a DS remake is released (if ever), and especially because having played FF Origins the DoS version disappointed me both in music and graphics.

If you are planning to play Final Fantasy V with a friend, you should choose the Super Nintendo version and play it over the Internet with another person.
If you are planning to play Final Fantasy V alone, you should choose the Gameboy Advance version and play it whenever you get a chance. The Gameboy Advance version boasts a superior translation over its other counterparts. Also, you will get the chance to try a few additional jobs, too.

How can I play it online?
A lot of emulators allow online gaming in multiplayer games. Though I suppose someone who's actually into that kinda thing should explain it. I think zsnes does it. But I wouldnt' know how to guide you through it

If you and I were to play Final Fantasy V online, we would require ZSNES and a copy of the ROM. You would, then, choose the Netplay option in the ZSNES menu bar.
The game is interesting when played with another person. I have always split it up as:
Player 1: Bartz and Faris
Player 2: Galuf and Lenna

The PSX version to me was pretty great, the load times aren't nearly as bad as FFVI and (what I've heard) Chrono Trigger versions for the PSX. Although an SNES will always run it smoother, so maybe the rom would work out good, you should check reviews for the fan translation. The GBA version I heard is good, but I know sound can be a little worse and portions of the battle background are cut out to fit the screen.
But overall I think you couldn't go wrong with any version of the game.

The GBA version of FFV is portable; it has the auto-dash feature; and it has a bestiary. I haven't played Anthology, so I can't describe it, but the original FFV doesn't have any of these conveniences.

It also has a few new classes which are arguably superfluous and in one case grossly overpowered against most monsters. However the bonus dungeon is actually the best designed one I've known of the GBA ports.

The GBA version is the best. Best graphics, best translation, best playability and stuff. No loading times whatsoever and don't worry about the music, I found it better than the SNES version! (Especially the Decisive Battle is miles better in the GBA port compared to the SNES version). And the Bonus Boss at the end of the bonus dungeon actually has relevance to the story, a nice thing.
Yes, FF V Advance all the way.

the snes rom is sufficient for anyone who has never played final fantasy, let alone ff5.

I must admit that I keep meaning to play FFV (as I keep meaning to read, watch or play about a thousand other things) on the GBA but have still yet to get around to it. It does sound really decent and I was interested in it if only to try out the new job classes, regardless of how good or bad they are. I've only played the SNES and the PSX versions myself and of those two it's easily the SNES version to go for. However, I think I would prefer the GBA version, but can't say for certain.

the gba version changed certain memorable mis-fanslations in the english rom, but it's basically the same except better (except smaller)
Unless you don't like pirate jargon.

Unfortunately, the Gameboy Advance version of the game removed its multiplayer functionality, so you would have to give that up if you were to play the above mentioned version for the above mentioned extra features...
I've tried all of them.
GBA > SNES fan translation > PSX.
'Nuff said.

The GBA version. Though the Rom is my second choice. The PSX is my least favorite solely for its lousy translation and localization. I know Faris is a pirate but she can talk without saying "Argh" in every sentence people :rolleyes2 .
The GBA version has a better translation, localization, and maintains the originals difficulty. I have yet to attempt the secret dungeon but I have never heard anything bad about it. Though I agree that the four (or three in my case) job classes are not so great. If only cause I don't feel they were written in well and also cause they arrive so late in the game most of them are useless on arrival.
Granted Cannoneer and Gladiator are good but it takes extra effort so late in the game to reap there benefits and Oracle is just poorly designed. I have never gotten Necromancer though I've had it described as a Blue Mage on steroids. Despite this though, the rest of the game is amazing and easily worth the playthrough. It has a damn good plot, musical score, cast, and one of the best battle systems in the main series.

I have grown to like the PSX version's hokey-ness. Faris's faux-Scottish-stereotypical-pirate accent really ruins some dramatic moments, but it is good for lulz if you have already played through before.
Plus... I looooooove how the after-battle crawl says "YESSSSSSS" and how Exdeath is spelled X-Death. Those factors are just plain swank. :D
