Is there a way to track the IP address used for an email sent to you?

If you have access to the mail server logs, maybe. If you don't know, you probably can't pull it off a all :p.

You might look in the header, but those can be spoofed.

You can look in the mail headers to see the mailserver that it came from, but not the IP address of the sender. You could try contacting the admin of the mailserver to see if they have logs, but they probably won't give it to you for confidentiality reasons.
