Having fought all of them myself, I know what they are. But I'm wondering what they are (ie. why are they so faded out, so much stronger then I could ever get my guys and girls etc).

Because they want you to have a challenge in X-2?

I think he's talking about the aeons in ff10. in ff10-2 they were not strong really. After you get to them you should be leveled enough to beat them from just story line.

He can't be talking about X's because I could kill them all with one hit except for maybe The Magus Sisters.

I'll answer the question for both games. :p
In X they are each summoned by a random person in the Yevon Clergy because Yuna and her Guardians are branded at heretics after the incident at Bevelle. Guess that the summoners didn't get the message that they don't have to kill you anymore. Generic NCP's are usually idiots so it's no surprise.
In X-2 the despair of Shuyin Drives the fayth insane and the aeons attack as a result.
In both cases, I guess if the Aeon is called with the intent to destroy, they take the dark appearance.

No, that can't be right. When Yuna summons Aeons, it is to destroy something. It is quite weird how they are super-powerful and twisted, compared to the normal Aeons. I think it might have to do something with the person that summons it. When Seymour summons Anima, it is a different summon to the one when Yuna summons it. So, because the priests are twisted and full of hate, the Aeon is different. But it is just speculation.

Seymour's Anima has different stats, but an identical look to Yuna's Anima. That was explained by the Aeon's strength being tied to the strength of the summoner.
The twisted appearance of the Dark Aeons, however, is never really explained in either game.

The Aeons at the end of the game when they get possessed use their current HP. That means he would only have to deal that amount or more, and it's insanely difficult to get Aeon HP above 50k.
Since they use the same palette as the Int./PAL Dark Aeons, it's an understandable mistake.
