Final Fantasy VII: The One Where the Main character and bad guy were awesome, but sequal stagnation and fans ruined them.
Final Fantasy VIII: Time and Time Not Again and the Return of Gilgamesh

Final Fantasy VI: Grand Finale

Final Fantasy VII: Meteor Crisis

Final Fantasy VIII: Eyes On Me

Final Fantasy IX: Melodies of Life

Final Fantasy X: To Zanarkand

Final Fantasy XII: Battle for Freedom

As one can tell, I took many of the song titles in the game to work as the subtitle. Mostly cause music speaks to me more than mere events and I feel several of these tracks speak for the game as a whole.

VII - Stairway to Seven

II - Dark Shadow over Palakia
III - Prophecy of the GulgansAgreed. It perfectly describes the stories of those games.

IV - Red Wing Rebellion (or Baron Rebellion if you want to be specific without spoiling too much of the story later on. Though Red Wing Rebellion sounds cooler)
VI - War of the Magi

I can't really think of any for the others.

these are the ones I played. (Ranges from serious to stupid)

FF4: Redemption
ff4: The first one with a brooding main character.

FF5: Another Warriors of light game with the job system.

FF6: Destiny

FF7: Memories of Life

FF8: More angst and traces of a plot

FF9: Revival

FF10: Spiral of Death

FFT: Dark Ages

FF12: I can't believe it's not star wars!

Final Fantasy I as is
Final Fantasy IV- Red Wings of Honor
Final Fantasy V- The Crystals' Secret (or No Butz About It :D)
Final Fantasy VI- Of Monsters and Men (the monster is Kefka, FYI)
Final Fantasy VII- In the Wake of the Ancients (or Mom's Gonna Fix It All Soon)
Final Fantasy VIII- When Planting a SeeD (absolutely awful)
Final Fantasy IX- Flight of the Canary
Final Fantasy X- The Never Ending Spiral
Final Fantasy X-2 as is (or Never Should Have Been Made)
Final Fantasy XII- For the Love of Ivalice

These all sound more like song names than a game subtitle, but I didn't want to be left out of this.
