I usually say "No, you hang up" then I hang up.

i'm pretty sure i once ended a telephone conversation with "you should look behind you" xD
otherwise i'm pretty boring, 'cause i usually just go "'kay, bye."

"Det' godt, hejhej." [That's great, bye]
then:
"Hov, vent forresten..." [Oh, by the way...] when I remember what I was calling for in the first place
then finishing off for real:
"Det' fint, ja, ses" [Right, yes, see ya]

Depends on the situation really.
If I want the person to just shut up, I might hang up on you. Might. Keep you edge, you know, so you know you can't bore me.
If there's nothing left to talk about. "Bye". Will do.
Unless! I need to make sure the person doesn't forget something, example, "Remember, SIX o'clock. *click*."
Occasionally situations will allow fun things like, "I'm right behind you." or "Stop scratching your head." or maybe even "Oh fu- *click*."

Upside-down. While beating myself with a dead mackerel, flailing wildly, burping excessively loud, and screaming "Chicken chicken chicken chicken RUUUN!!!" while painting an elaborate portrait of Abraham Lincoln eating grapes in a snow storm on top of Mt. Sinai. That way they know not to call me back anytime soon...
Unless I want them to, in which case I say "Talk to you soon" and then hum the Mortal Kombat theme until they hang up.

Well at work there's a formal closing I'm supposed to end with (I work tech support for an ISP). At home, just a regular good bye or see you later.

I say good-bye when it's really early in the conversation and the person talking to me is usually like, "WAIT! Why 'goodbye' so early? Lets talk some more?"
I'm not anti-social, I just don't like talking to people over the phone for over 40 minutes, because time costs moneys.
