I would probably have to go hot and cold. Although I loved the Snowboard minigame in 7.
Haven't played x-2, turned it off after 2 hours and sold it :P

1) Triple Triad in FFVIII.
2) Chocobo breeding/racing in FFVII.

There's tons to pick from but I gotta give the gold medal to Triple Triad, for being not only widespread and enjoyable, but ridiculously useful in multiple fronts. Of course, that's part of its weakness, too: it's effects are so far-reaching that it can siphon away what little difficulty the game has left. Getting Degenerator two hours in is pretty funny, though...
Runner-up is probably Chocobo Hot & Cold. Digging up items isn't that awesome itself; it's using the world for a massive game of hide-and-seek, like a primitive geocaching expedition. And the flamenco music...way too awesome! Shame it's not heard outside of the minigame.

Wow. I hated Gold Saucer, Hot and Cold, Frog Hunting, Tetra Master and LeBlanc's Horrible Lesbian Parody (give me MY girlfriend, not this creep!) Just goes to show you how much different things appeal to different people.
My favorite is Blitzball. A nice mix of strategy and skill and planning ahead, plus I love helping my team improve its skills and blow away the opposition and rack up goodies. There's mini-challenges within the game like "can I get two top scorers per season?" or "how about a three way tie for top scorers?" to keep me entertained.
My second favorite is Triple Triad. I prefer it to Tetra Master because the art on the cards was better, and it was all strategy/tactics, no random numbers. I also loved the different regional rules.
I'm also probably the only person in the universe who loves lightning dodging on the Thunder Plains. It forces me into a very Zen Archery place. Om..... :)

I'd say Triple Triad is my all time favorite. I can spend hours playing that game. Though I do love snowboarding and the submarine game in VII were fun too. I think Choco Hot and Cold is about my next favorite. :choc:

Chocobo Hot and Cold, very addictive (but not as infuriating as the card games) and some great rewards to be had from it.

Although this thread is obviously about opinion, and people's opinion can differ (and rightly so, too!), if "Chocobo Hot and Cold" and "Tetra Master" are not in your Top 3, then you are simply wrong.
I also like the boat puzzle sliding game from FF1. I was always able to buy the best things straight away because I rule at slidey puzzles.

At least in the Origins version, you can complete the puzzle in under 2 minutes to get 10,000 gil, under 4 minutes for 5,000 gil or under 6 minutes for 2,000 gil. I think you get pretty decent rewards if you beat your earlier record, too (i.e. start with a crappy time and gradually work your way up from there).

I know it's not from a popular FF, but I did enjoy Sphere Break. It took a bit to get the hang of, but it was satisfying when it was done. I also held a *tiny* bit of a grudge against that bratty kid, so that made it even better
