I think the title should speak for itself, no? It doesn't have to be the 'soundtrack' that actually got released on CD, as some/most times they only feature the more well known songs and leave out the instrumental stuff, also discuss favourite composers and such.
The one that pops into my head straight away is Almost Famous, not only does it have some wicked songs, but the music that was composed specifically for the movie is beautiful as well (http://www.youtube.com/watch?v=k35cuOy1s-I). I also love most everything I've heard of Clint Mansell's.
No doubt I'll think of more.

Star Wars, Indiana Jones, Jurassic Park... anything by John Williams is great. He's the best.
Danny Elfman is also good.

My Neighbor Totoro purely for Paths of the Wind. There are so many variations of that song and I love them all. Also, this is kind of embarrassing, but I love Save the Last Dance's soundtrack. Other favs include Edward Scissorhands, Eternal Sunshine of the Spotless Mind, Amelie, The Music Lovers, Garden State (as much of a prick as Zack is I must admit he knows how to pick songs for movies -- pretty much the reason why Scrubs and that :bou::bou::bou::bou: other movie he was in that I can't remember the name of had a great soundtrack), Pan's Labyrinth, The Lion King, Jurassic Park, Mulan, The Book of Eli purely for this (http://youtu.be/F1xI0LZ6YhA), Dead Presidents, Shaft (original), Requiem for a Dream, and Black Swan. :jess:
I think the best film soundtracks though are the ones with purely original content, so that's why I respect films like say, Amelie more than a film like Dead Presidents or Black Swan since they use previously written things or renditions of things that have previously been recorded.

I didn't like the movie all that much, but I love Appleseed's soundtrack.
Of course, my number one favorite goes to both Mortal Kombat movies.

Pretty much nothing tops the work Basil Poledouris did for Conan the Barbarian.
YouTube - Conan the barbarian soundtrack (http://www.youtube.com/watch?v=UChMJ14dQNs)
Epic music at it's finest.
EDIT: The man also did the music for Robocop, he is a god.

The Fifth Element (http://www.youtube.com/watch?v=-fWu8WZ3804&feature=BFa&list=AVGxdCwVVULXfWLDr9twD752eSLj8uhcpJ&index=11), duh.
Gladiator and Aladdin. How has no one mentioned those two films yet?

Lord of the Rings Trilogy, in particular YouTube - The Lord of the Rings: The Two Towers Soundtrack - 19. Gollum's Song (http://www.youtube.com/watch?v=biGP2BXVsYI) so moving, makes you feel sorry for our poor Smeagol.

My favourite piece of music from a movie is debatable but I'd probably end up settling for this great track
YouTube - Sunshine Soundtrack "John Murphy - The Surface Of The Sun" (http://www.youtube.com/watch?v=rWlXU2DeYkQ)

I've been enjoying the soundtrack to Akira by Geinoh Yamashirogumi recently.
I also really like O Brother, Where Art Thou?'s and Blade Runner's soundtracks, and Underworld and John Murphy's soundtrack for Sunshine is pretty good.

My all-time favorite soundtrack is "Harry Potter and the Philosopher's Stone". I can listen to this over and over, and it simply thrills my soul.
YouTube - Harry Potter: Theme Song (Hedwig's Theme) (http://www.youtube.com/watch?v=zCNHVMIYqiA)
Another worthy mention is the soundtrack to Jurassic Park. I still get the chills whenever I hear the theme playing somewhere.

Amelie, Garden State
Lord of the Rings Trilogy
O Brother, Where Art Thou?
In addition to these and whichever movies I'll inevitably forget to mention, I like the soundtracks for 8 mile, (500) Days of Summer, I'm Not There and Juno.
Uh, and some of the tracks from Dreamgirls.

(500) Days of Summer
City of Angels
Cold Mountain
Cruel Intentions
Garden State
I'm a fan of Gabriel Yared's simple but lovely instrumentals (hence the 2nd and 3rd on that listing).

I forgot about 500 Days of Summer, that's definitely on the list. Also add Man on Fire and Kill Bill (both volumes I think, although I saw 2 more recently so maybe 1 wasn't as good), they had pretty awesome soundtracks.

Star Wars, Indiana Jones, Jurassic Park... anything by John Williams is great. He's the best.
Williams is definitely up there for me.
Yann Tiersen has also done some great stuff (Amelie, Goodbye, Lenin!).
Of course, my number one favorite goes to both Mortal Kombat movies.
You, ma'am, are my kind of people.

Also add Million Dollar Baby to my list. Clint Eastwood consistently puts together good sountracks but that one is the standout for me.

A lot that have already been said. Star Wars, obviously. Indiana Jones, LotR trilogy, Tron Legacy.
O' Brother Where Art Thou had a good soundtrack. Jurassic Park as well. Others I'm probably over looking...

Blade Runner by Vangelis: uplifting, nostalgic, furturistic and heartbreaking.
Also, a highly underrated soundtrack for the movie Dinosaurs.
THIS TIMES INFINITY
I wasn't a huge fan of the movie but the soundtrack is incredible.
Others that come to mind: An American Tail, Antz, The Horse Whisperer (and pretty much anything else by Thomas Newman, including Finding Nemo and Wall-E).

Obviously Williams and Howard Shore. Also (500) Days of Summer has a wonderful soundtrack. I know James Horner has been mentioned, but I'm awfuly surprised that Titanic has yet to be mentioned. I adore that soundtrack start to finish, along with Back To Titanic Soundtrack.(The Titanic Suite and that version of Come Josephine, In My Flying Machine are beautiful pieces of music).

The Social Network, mostly because it was composed by Trent Reznor which I discovered not so long ago. There are probably better ones but this one is the only one which comes to mind right now.

In terms of films with great individual theme tunes though, I'd also have to point to Jurassic Park, Escape from New York and Total Recall (... I know!) though.

The NeverEnding Story II: The Next Chapter.
And no, I'm not kidding.
The reason is purely incidental. The soundtrack was never released in the states only in limited quantities in the UK so it took me YEARS to track down a copy. While the movie is an absolute Disney-fication of the second half of the book, I still have nostaligic love for it, and the music is actually REALLY smurfing good.

Xayride is actually one of my favorite fictional villains.
Have you seen Nostalgia Critic's review of the NES III? He really flies off the handle when the closing theme is 'Born to be Wild' as sung by the Rock Biter instead of the Limahl theme.

Nightmare Before Christmas is probably one of my top favorite original movie soundtracks. Tenchi Muyo!: Tenchi In Love may actually be my favorite soundtrack ever. Christopher Franke did a bitching job with the soundtrack and its still one of the few instrumental OST s where I can tie each track with a scene from the movie. Final Fantasy: The Spirits Within has a pretty underrated soundtrack imo.
The rest of my fave soundtracks tend to be collections of popular music, like an 80s flick or 80s themed movie that uses, obviously, an 80s soundtrack.
