Also when I first read the title (it was cut off) I thought the thread was called "post your vegan powers"

I have super empathy! Dunno what it's good for, though! haha

Wow, took less posts than I thought for someone to just blatantly post something non-vegan.

The only other vegan member I know of is Calliope, and she doesn't really post much. I have a vegan cookbook that I enjoy, but I'm not vegan. My favorite recipe from said book is basically kale, miso, kidney beans, and garlic. I also enjoy tofu and pineapple in peanut sauce over rice.

I love quickly blanching veggies like green beans, sugar snap peas, and broccolini and just eating them plain and simple. Maybe a little dressing of olive oil and sherry vinegar.

Ina Garten's sauteed wild mushrooms (http://www.foodnetwork.com/recipes/ina-garten/sauteed-wild-mushrooms-recipe2/index.html) is not a vegan dish, but it could easily be adapted to be vegan. Just switch out the butter for a vegan butter substitute. I add in some thyme leaves and it is outrageously good. Like, better than mushroom dishes I've had at fancy restaurants.

Bibimbap is one of my favorite dishes ever, and it can be easy to make vegan. Just take out the egg and the beef. The rest of the components (rice, bean sprouts, spinach, lettuce, cucumber, mushrooms, carrots, and Korean pepper paste) are all vegan friendly.

Pan fried tofu (http://www.korean-food-recipe.com/korean-fried-tofu/) with a soy sauce dressing is super good too.

Black beans, corn, chopped tomatoes, basil, garlic, and just a touch of cayenne and balsamic vinagrette.

I'm not vegan, but that's yummy.

I had a friend in the Air Force who was Hari Krishna, so we'd travel to a temple in Dallas he worshipped at. They also had a great vegan restaurant there with some amazing food. They had this lasagna style dish with peanuts. I know it sounds awful, but it tasted quite delicious.

If I order a huge dish of mixed veggies with the sauce they put on orange chicken at chinese restaurants, minus the chicken, can it still be considered vegan?

I did that once when I was on a diet at this awesome chinese place in LA and it was to die for.

If they're actually dipping the sauce out of the same pot that has the chicken, then it definitely ain't vegan.

If it's the sauce separately, then I'm not sure because I don't know all the ingredients in the sauce.

Guess I'll just have to settle for vegeterian. Vegan takes way too much work for someone as lazy as me.

I try to stay away from unfermented soy, such as tofu, because apparently it has a lot of enzymes and shiz in it that actually inhibit absorption of some minerals. And its processed with a lot of aluminum.

But those are some good dishes guys, definitely going to get some mushrooms next time I go grocery shopping!

I'm not vegan but there are some brands of Veggie Burgers that actually taste pretty good.

not to rain on your parade chimp but the only vegan food i eat is fruit that i find on the floor when i'm in an apple orchard.

everything else fails to be vegan to me for one reason or another.
