Jeremy Robsons orchestral remakes are pretty sweet, also a lot of what JigginJonT does is badass, Flood Plain piano arrangement of Big Blue from F-Zero being my favourite. There are a bunch more songs I can think of but can't recall off the top of my head. Also the Chrono Symphonic and FFVII:Voices of the Lifestream albums are both awesome. OCRemix is great.
