My cookbook now contains over 300 recipes, as was my goal! I have been working on this cookbook for over a year now. I actually had a much smaller one made that I was working on before that, but sadly I lost it when I moved :(.

Next goal is to actually cook all of these dishes. I've cooked a good many of them, but even at one dish a day this will take a while... :D.

Do you have any goals when it comes to cooking? Taking a bad recipe and improving it? Finding recipes that feet your dietary wants? Trying to make something new?

I am so happy, because since finishing uni I have cooked soooo much more!

I thought I had lost my passion for cooking lately, but I think I must have just been too stressed and tired to cook - I have cooked so much this week while at my parents! I made a gorgeous slow cooked caserole the other day served with stilton mash and vegetables. And now I just made the most amazing curry! I've also baked so much too. I'm glad I've got my cooking head back on, I missed it!

Also, congrats on all the recipes! You'll have to share some! :bigsmile:

My goal is to cook and experience as many unusual dishes as possible. I get bored with run of the mill servings, so I expand.

That aside, I want to write down all the family recipes and work recipes. I have some of the former written down and the latter are all mostly in my head. Also, some of the work ones are not so much recipes but general suggestions...I do not always measure things...

I am SO freakin' proud of the pizza I made yesterday.

It's a low carb pizza, with the crust made out of flax meal, coconut flour, and mozzarella cheese. I was worried when I first made this because how the hell is a pizza without flour supposed to taste any good?? I was convinced it would be inedible. But it was DELICIOUS. And it was only about 4g carbs for a 1/4th of the pizza! Yeeeeeaaaah!

I think this crust is better than the cauliflower crust. It's thicker and more dough-like than cauliflower. I've been using cauliflower for EVERYTHING lately so I needed a break from it. I've been using it to substitute both rice and potatoes. I will try making cauliflower garlic "bread" though.

I want cauliflower garlic bread!

The only goal I can think of right now is to make a pie crust that doesn't fall apart when I'm rolling out the dough, despite being kept cold for hours.

It also depends on what you want to use it for.

Like if you're wanting to make a guacamole or an avocado spread in general, softer ones are better.

If you plan to use it in a salad or roll sushi (California rolls or something), then you want firmer ones - not rock hard. It should have a little give. Squishy ones are a mess to chop and add to a salad and it just doesn't look pretty.

That's my general rule of thumb anyway.

And if they're rock hard, let them sit out for a day or 2. They'll ripen up.
