But she pronounced it the same way people pronounce Celes, most of the time. Although I hear "SELL-ez" a lot, too.
But since we have a Locke thread, let's have a Celes thread, as well.

Well.
I first looked at it and said "SAY-lez."
My friend Robbie said it was "SELL-ez."
But later, my sister said it looked like "Sell-ESS" to her, as though it implied "Celestial."
But a cold reading of the kana is "Sell-EESSE."
More like sell-less in my case and I didn't realise there was alternate pronunciations.

I've just realized that VeloZero was asking me which one I thought was most common.
I was under the impression that "Sell-LESS" was the most common pronunciation, due to it being a parallel with "Terra."
Celestial <-> Terra Firma

I always figured it was like Celest (an actual girl's name) with out the "T" sound at the end.

I pronounce it as if it were part of a longer name, like Celeste. This method is not foolproof, though, as Final Fantasy games sometimes have their own take on their character names even when the name is a real name, like Cecil (pronounced in-game as SES-ul).
