I skipped breakfast today so I'll start with lunch.

Lunch: Mexican rice, with pitta bread and hot peri-peri sauce mixed into mayonnaise. I don't care what anyone says, it makes the most delicious dip ever.

Dinner: Roast pork with all the trimmings; pigs in blankets (who says they're just for Christmas?!), roast potatoes, stuffing balls, Yorkshire puddings and asparagus. And gravy, of course.

I'm about to have my dessert - meringue nests with fresh cream and toffee sauce. :excited:

Today I had beans on toast for lunch with a huge glass of fresh orange juice. Sometimes the simplest meals are the best.

I had a mash up of a dinner, as I had left overs from yesterday and I don't like to chuck things out, so I had chicken, mexican rice, asparagus & pitta bread. It was yummy.

Yesterday I had a bunch of sushi and it was deeeeeeelicious!

http://i62.:bou::bou::bou::bou::bou::bou::bou::bou::bou::bou::bou::bou:/28le7uu.jpg

Today I had a frittata that Del Murder made me, and grilled skirt steak with green beans and brussels sprouts. And a big bowl of ice cream and another big bowl of strawberries.

About the strawberries, these were special strawberries because they were rescued by a heroic Del Murder. I knocked off the bowl of strawberries from the table with my big ol' belly. How sad and embarrassing is that? Knocked it off with my belly! And being hugely pregnant and hungry and hormonal, I started to cry. Within LESS THAN A MINUTE, Del Murder had scooped up the fallen strawberries, gone into the kitchen and brought out a freshly washed strawberries for me to eat. It all happened in a matter of seconds! Not even exaggerating. My hero.

That sushi looks delicious and I don't even like sushi!

Breakfast: Granola breakfast bar with oats & chocolate chips

Lunch: Bagel with mozzarella and chorizo.

Dinner: Home made sausage casserole with a red wine sauce, caramelised red onions and button mushrooms. Accompanied by home made dauphinoise potatoes. It was one of the most delicious meals I've had in a long time and the best thing is that it was cooked and ready to eat by the time I got home, as my boyfriend had the day off work. :jess:

Today, my food for the day was pretty rubbish... Until dinner time and it became an amazing food day!

Breakfast: Granola breakfast bar

Lunch: Ham, cheese & mayo sammich... It was a boxed sandwich and it wasn't very tasty at all.

Dinner: We went to a noodle bar after work for a Valentines dinner... I had vegetable spring rolls with sweet chilli dip, followed by sweet & spicy crispy chicken, with veg and egg fried rice and it was delicious. ...I know, I went to a noodle bar and didn't have noodles. :jess:

So far today I have eaten two satsumas. It is not quite 11 am here so that isn't too bad.

I have a chicken and chorizo sandwich waiting for me in the work fridge accompanied by a packet of salt and vinegar squares.

Also, my girlfriend and I briefly discussed the possibility of getting Domino's for tea tonight. This thought is pleasing.

Breakfast I had apple cinnamom oatmeal with tea

Lunch I had a very delicious soft shell crab bun (basically a harmburger though) and it had cucumbers, Japanese mayo, lettuce and carrots -- the side was more cucumbers with mildy spicy Japanese dipping sauce. All from a place called Kobayaki near FIT. Just a water to drink.

I made tacos - with ground beef, diced potato, onion, garlic, & a cubanelle pepper- in corn tortillas and fried like that.
And I made homemade black beans with bacon, a ton of jalepeno ('cuz for whatever reason my jalepenos were not spicy at all), and of course garlic & onion.

And grilled nopales (cactus) that I scraped the spines off of myself

and Mexican corn on the cob- I roasted them over the stove top eye (it's a gas stove), spread some lime flavored mayo on them, sprinkled on queso fresco, and Tajin brand fruit seasoning.

Sooooooooo yummy.

I only had a snack and one meal today. This may sound quite pathetically small to many, but for me it was quite considerable.

Snack: A Rocky Road slice brought from Greggs to go with my coffee. This was brunch time or there about.

Meal: Pasta, tomato (sundried) and feta salad with bbq chicken. This was Lunch time.

I wasn't hungry so skipped dinner, I don't eat all that much most days to be honest.

Southwestern Grilled chicken salad from Mickey Ds ..

It was funny,. We had to meet up w our old roommate and his wife in Manhattan so that Jay could give dude his rank patch back (he had to borrow it cuz he can't find his)... Shorty, that looks like milk with ice. You have your milk with tea -- not the other way around I see. xD That looks amazing though nom nom.

This evening after I spent much of the day cleaning, I took my sister and mother out to dinner for Mother's Day. I got a filet steak with broiled lobster tail, grilled asparagus, and a baked potato with chives. I ate it all because I had forgotten to eat all day. To drink, I just had iced water with a slice of lemon. Afterward we had frozen yogurt for desert -- orange and cream flavor with strawberries and gummi bears on top.

Pork should have been cooked for longer at a lower temperature to make it shrumyum, and unfortunately the avocado and mango aren't yet ripe, so overall a slight failure. There's promise, though, so I'm going to change the spices up and do it again once the greens are ripe! :D

Pheesh never updated.... I guess he spent the night crying in the corner!

I've cooked many dishes, slow roasts are pretty great imho though I prefer to leave the skin on to make crackling with (give it some scoring to allow heat to better penetrate to the meat then salt it heavily to make sure it crackles up. The cider bath is a nice touch, always goes well with Pork with Leeks/Onions and like some Parsnips and carrots (could even throw in some sprouts but I prefer them to be cooked quicker to retain texture and flavour)

Pheesh
01-20-2015, 05:47 AM
I crackled the skin after I took the roast out because the whole thing is cooked at 130C for 10-12 hours under foil, so it never would have gone crispy had I left it on. The whole thing went well though, it just turns out that after 10 hours of smelling food all day and a hectic last hour of cooking the last thing you feel like doing is taking pics of it all xD We had it with mashed potato and charred baby carrots and baby corn, then I reduced down the remaining cider and cooking juices into a gravy. We also have a good 1.5kg of leftover pulled pork though, so tonight Tara's making pulled pork chilli con carne and tomorrow is pulled pork sliders.

Last night I had to use some mussels that my Dad had caught down at the river, so I made some chilli mussels. It was my first time ever making them and they came out amazing, I was incredibly happy with the result.

I'm sorry for double posting.

I just made the salsas for my big ole Mexican dinner.

They'll kick your ass. Hard.

http://i.imgur.com/iOgqOYRl.jpg

The one on the left is a salsa that I used to practically cry over cuz it's so incredibly spicy. I eventually got a little used to it and then fell in love even though it's so hot. My favorite taqueria in Nashville serves their tacos with little sides of them. It's made with avocado, tomatillos, onion, serrano peppers, and cilantro.

The recipe I found calls for everything to be fresh, but I'd already roasted most of my tomatillos, all but 1 of my serranos, and a whole onion for another salsa. So I used the 2 fresh tomatillos I had left, plus a couple of roasted ones, my 1 fresh serrano pepper & 2 roasted ones, a mix of fresh & roasted onion, & big handful of cilantro. Plus the avocado. And a little water to thin it out. I wound up adding an additional 1/2 of a jalepeno though to kick up the spiciness a couple of notches.

The red is made with roasted plum tomatoes, a couple of tomatillos, garlic, onion, & a bunch of toasted dried chiles de įrbol.

Soooo yummy. But soooooo. Spicy. Omg. Even a tiny drop of the red is enough.

I'm not against mash though. I made Roast Uncle Frank last week and mash was the perfect accompaniment.

You know what is actually really nice? Baked family members. I know it sounds unusual, but until you try some baked cousin then don't be too quick to judge. I personally like a whole cousin cooked en papillote, just add some lemon, thyme and maybe some fresh chili if you're using a particularly bland cousin. Don't knock it till you try it!

Hmmm... interesting idea. A few years ago, did actually try a Baked Third Cousin Twice Removed Tart. It was unusual to say the least. Maybe first cousin would be the way to go for any future dalliances.

I would not recommend Fried Granny. It was smurfing awful.

Oh yeah, older family members need to be slow cooked, definitely. I had trouble finding a crock pot large enough to fit my grandpa in though.

Yeah, I won't make that mistake again, believe me.

If you're after something a bit sweeter though, you can't go wrong with a Traditional Mother-in-law Trifle. It has a lovely smooth texture and you don't get that bitter taste you can sometimes get with blood-relatives.

I made stuffed chicken breasts with sauteed asparagus, mushroom, onion, & Sun dried tomatoes and wrapped in prosciutto! & I did zucchini & yellow squash spaghetti with a burst tomato sauce.

Was mega yummy!

I'm thinking of doing stuffed pianos with steak & veggies & something.

Or patty melt sandwiches with fries.

It's a toss up at this point.

I made chicken fried rice! I sauteed up some ginger, garlic, and onion before adding in the rice & then stirred in low sodium soy sauce, a bit of hoisin, and some juice from an orange. And red pepper flakes. And of course the chicken, peas, and carrots. XD

I made a Taramisu today!

Made the sponges from scratch, and the zambaglione too! This is a little stack I made with the leftover sponges and some cream - I can't wait to cut into the actual cake later and see how each layer looks. Fingers crossed it looks beautiful!:D I've made some little white chocolate shards to serve it with, and of course I'll be topping it with cocoa powder. So excited. I know this is one of Pheesh's favourite desserts so I hope I can do him proud with mine. I always thought this dessert would be easy to make... but I definitely underestimated the challenge... There's a lot of tricky components to this dish so I hope they all balance out. Overall I spent about 3 hours this morning on it! So it had better be good!

I made my amazing Mexican Shrimp Cocktail, homemade tostadas, Mexican rice, and spicy black beans! The rice needed more tomato sauce as it isn't really as red as it should be and there isn't avocado in the cocktail cuz the ones I got are nowhere close to being ripe :(

That's the hot chicken & my mommy's tater salad I made the other day. Soooooo stinking yummy.

And my bf's lunch! Southwestern pasta salad with corn, black beans, tomatoes, onion, sauteed red & yellow bell pepper, cilantro, jalapeno, queso fresco, and I did a vinaigrette with lime, olive oil, garlic, cumin, crushed coriander seed, salt, and pepper!

I've also got a pasta salad with Sun dried tomatoes, olives, goat cheese, and made a lemon/olive oil dressing with basil and garlic.

And I'm making fajitas. And greek chicken pita sammiches things

I made juevos rancheros with some leftover rice and beans that I made for breakfast.

Lunch was some of this leftover pasta salad and a fajita taco with a corn tortilla.

Dinner I'm just snacking on hummus and veggies and fed my bf the rest of our leftovers.

I'm making a big pot of hearty chilli tonight - I'm adding in chickpeas as well as beans to bulk it up and make it more filling for the belly on what will probably be another cold, cold night!

Lunch I had chipotle hummus and broccoli and cheese.

I've just had a cup of tea so far this morning. Last night Pheesh made us a lovely prawn salad - but we were both still quite hungry later on in the night! It's definitely time to be having big hearty meals when the weather is this cold!

I've done a meal plan for this week for what I'll be cooking us both! Got quesadillas, a garlic linguine dish, and a dahl! I've never made a dahl before so I'm super excited as it's one of my favs! :) Yummy yummy in my tummy! :D
