So after consulting with a few specialists and doctors, we've found out that my son has an odd allergy to GMO bread. Odd in the sense that it doesn't cause him to swell up or anything, but actually affects things like his speech pattern, sleeping pattern, and moods. Eating too much GMO breads causes him to have difficulty pronouncing certain words and sounds, causes him nightmares, and also makes more angry and aggressive. It also causes him to breath rapidly some times.

So for those who are more educated on this subject, what kind of foods/breads and brands would you recommend trying and avoiding?

You can't be allergic to "GMO." That's not possible. You can be allergic to specific modifications, certainly, but "GMO" just means that it has been genetically modified in some way, it doesn't refer to any specific attribute at all. Two things that are both "GMO" can have literally nothing in common with each other. Maybe all common GMO breads end up with the exact same things in them, so that's a close enough approximation?

This is the bread I usually eat (and it's great), which I guess must be GMO-free since it is USDA-certified organic:

I am finding it difficult to believe that GMO breads are behind these behaviors. The simplest solution is probably the truest - something else is affecting him and causing him to have nightmares and mood swings and aggressive behavior. Using bread as a scapegoat seems weird to me, especially coming from a doctor.

It could be. The doctors just told us specifically to avoid GMO breads.

What a bizarre thing for a Doctor to suggest. I'd recommend having your son seen by another doctor to get a second opinion.

I agree. I'm no expert but I've had allergies for as long I've been alive and no one anywhere has described these kind of symptoms as part of an allergy.

Edit: Did they at least say why or how the GMO bread could be causing these behaviors?

I didn't understand some of what was being said, but his endocrinologist suggested that the GMO breads can be helping to aggravate some of the symptoms of his hypothyroidism, some of which includes poor sleeping. Since cutting out a lot of the glutton related stuff, his speech has improved and he's been sleeping better. It became an issue because his medication has been finicky. His blood test would go back and forth between too much medication and too little and he would sometimes display some of the symptoms of hypothyroidism when his T4 levels were where they were supposed to be. After going back and forth for a long time (only having had a few periods where his levels were properly balanced with no behavioral or other issues) the doctor suggested they look at dietary intolerance's and she now suggests he stay away from GMO breads. It could be an entire gluten thing and because my mom doesn't use a lot of gluten in his diet aside from breads, the doctor was just more specific about what to watch?
