I think this is like the 1000000000000000000000000 thread about this, but for health reasons, I'm going to go vegetarian and gluten-free.

So, to our vegetarian and vegan members (or even if you aren't, but have some great recipes) what are some of your favorites? Bonus points for easy or bulk recipes that can be easily frozen and re-heated later!

I have some I can post when I get to my cookbook. I don't have many (if any) vegan recipes but I do have some vegetarian if you're interested!

Well, almond milk doesn't really matter as it isn't dairy xD

That's cool! I still ate cheese and dairy products when I was a vegetarian. There are tons of great sites that would do you a lot of good to look through, but my biggest recommendation would be to just search for veg recipes on Pinterest.

Haha, it doesn't errupt or anything, its just volcano shaped :P

Ingredients:
6 mashed potaotoes w/milk and butter
1/3 cup butter
1/2 cup grated cheese
2 egg yolks
salt to taste
paprika to taste
Bread crumbs

Directions:
Prepae mashed potatoes. You shoould have about 3 cups full. Shape them in to a mount on an oven dish. Make a hollow at the top of the mound the size of a teacup. Melt butter. Reserve 2 tbsp. Mix drated cheese, yolks, salt and paprika and the not reserved butter. Beat ingredients well and pour them in to the hollow area. Spread the sides of the mound lightly with the reserved butter. Cover the mound with bread crumbs. Brown at 380 degrees F

thugkitchen.com is an amazing blog- someone else linked it here in EoFF back when I was all about doing my own food blog. But I've made the 3 bean chili & the lasagna (subbed out the noodles for eggplant slices) & both were really good.. They haven't updated in awhile cuz they're working on their cookbook that's gonna be released this fall, but there's still a ton of recipes to go through.
