It's not visually flashy, but I really enjoy Irvine's shot.

Renzokuken, preferably with Lion Heart attached. I just really like it.

Honorable mentions to Quistis' Mighty Guard and White Wind, and Irvine's Shot.

I remember intentionally trying to get Selphie low health so I could keep pressing "do over" til I reached the full-cure option in boss fights.
