After the first game, subsequent games in the series started to have "darker and edgier" tones to them. Do you think Kingdom Hearts is too dark and edgy for mainstream Disney fans?

No.

Not really, Disney is actually darker and edgier than average people think and it's only due to a time frame where they were actively moving away from that image that created the silly notion Disney is pure family friendly. I mean Fantasia is a damn art film with horror, sexual imagery, and largely serious themes. Even the Sorcerer's apprentice quickly goes from being whimsical to rather frightening before it all plays out. Hardly what I would call a family friendly film.

It is differently dark. But not as ultimate as in actual Disney stories.

Scar gets eaten by hyenas.
Scar becomes a Heartless, is destroyed and so in case they find his Nobody, he returns in his normal form.

Jafar dies from the lamp falling into lava which makes him explode pretty much.
He gets defeated by Sora and it is not all that dramatic.

Xehanort wants to absorb Terra.
Terra says no. He loses control over his body but at least still exists.

Hm ...

Even Captain Hector Barbossa's death was handled like a "quick! don't show it!" thing. I think the darkness is more present but its not necessarily darker. It is just served in other portions.

No, but it is a convoluted mess.
