FFVII Cid. I'd play that. I enjoyed Laguna's wacky adventures in VIII, but a full game of that might be a little dull. I do like him a lot, though. And as much as I enjoyed Beatrix, I think I prefer her as a mysterious sort of secondary character.

Tempted to pick a couple, but looks like I am the only one (as of this post) that likes putting them all in a mobile puzzle game. Not some throw away thing either. Really emphasize that the characters are not main/side characters and you can even inject some humor in a simple game concept!

The spin-off we all NEED to play is Reddas in Pirates of Balfonheim: The Curse of the Somethingy Something (obviously, I'm doing a pun on Pirates of the Carribean, but I can't think of anything good. Suggestions welcome).

Because Reddas is cool, but only got a bit-part in XII. Plus pirates.

We could play the story of Reddas leaving the Judge Magisters and his rise to Pirate King!

And of course, we could find out the answer to the most important question of all of FFXII: where DID Reddas get those fabulous trousers?
