I have like two of them in the fridge and have no idea what to do with them that isn't pickling or just throwing them at a plate of lettuce and calling it a salad.

What do you do with cucumbers?

slice them up put them on some bread and put mayo and herbs/spices/salt on them. it's pretty good actually.

In summer I like to add slices of cucumber to water, along with some lemon. They also go fabulously in a gin and tonic! Otherwise I'll just eat them as they are with guacamole/salsa/houmas/dip of choice. I love cucumbers!

You can use them in a sandwich. I personally think it goes well with tuna. Or if you like enchiladas you can dice cucumber and put some. It's filling and you won't even taste them. Cook it in stir fry as well.

You can dice up the cucumber into small pieces, about M&M size. Mix the diced cucumber with some dried dill, sour cream, a cap full of olive oil, salt and pepper.

It makes a nice spread for crackers, bread, or sandwiches. It also works as a base for tuna salad or chicken salad.

Yeah, it's not too bad. I like it with tea. It feels like a summer/spring dish, and it makes a light breakfast. I like it best on breads with crunchy crusts, like a Cuban roll or a brotchen.

You can try a splash of lime or lemon juice in it to give it a little zing.

I tend to just have them shaved without the skin on a salad. Taste of absolutely nothing and not much use for anything else,.......except the aforementioned (or at least alluded to) rude uses!!

Update!

So, I found a super yummy recipe for a Vietnamese tofu salad that cured my need for something to use my cucumber for.
I had never had Vietnamese sweet chili sauce before. How have I never had this flavor introduced to me?!

I hate cucumbers. The most I do with them is slice them up n put em in my water. On a few occasions Im ok with having em in rice paper rolls (with a whole heap of other vegetables) because I can't taste it.

Wow, this thread hasn't even segued into a weird debate about zucchini and American cucumbers yet. I'm impressed.

My favorite type of cucumbers are pickles :D

I love a tuna pasta with cucumber. I'll put cucumber with anything if it goes, its so delicious, love eating it on its own too :)

Slice 'em thin and lightly dust them with paprika or chilli powder for a unique appetiser.

If you're a beer drinker, add some slices to a glass of Berliner Weisse for a truly refreshing thirst-quencher!

That dip sounds really great, Sharky. I'm not a huge cucumber fan, but I might try it out.

One thing I like to do--although it's more of a summer dish, as you want to use fresh, farmer's market tomatoes--is slice up a cuke and several tomatoes (onion optional), throw them in a bowl with a shit ton of Italian dressing and put it in the fridge to cool and let all the tastes meld together. It's sooooo good.

Cucumbers have always seemed flavorless to me so I've never really used them in anything unless I'm making a cucumber sauce for gyros or tacos.
