It's my sister's 21st Birthday at the weekend and I've been tasked with making her a cake! I have 3 ideas. I'd kind of like to do all of them haha! But if you were a spoilt 21 year old and it was your birthday what would you want?

Pink lemonade cake!
A pink sponge flavoured with lemon! (pink lemonade cake!) and decorated with buttercream roses. The 'sensible and fancy' option!

The chocolatey option! - Chocolate sponge with vanilla buttercream and HEAPS of chocolatey treats!

Candy pinata cake
The diabetes/fun option. Vanilla layered cake with a pinata candy filled centre - thin layer of frosting and loads of confetti sprinkles!

I think the pinata cake is going to be my winner. I'm imagining decorating it with a fondant unicorn horn and spiralling buttercream down the side as a mane.....

I wish I was this good at baking to even make these. But they all sound delicious, so I'm sure your sister will love them!

You CAN do all 3 if you really want to. But I recommend choosing only 1 sponge because having both chocolate and lemon sponge together will be too busy. If you go with lemon sponge then definitely add sprinkles into the batter to make confetti in the baked cake. Then when you cut into the cake SURPRISE you get a wonderful assortment of candy. You can even use lemon candies inside the mix for a tie in. Elegant on the outside. Fiesta on the inside. :quina:

I'm going for the pinata cake! It'll be plain sponge cake with vanilla buttercream outside in a pretty thin layer. I'll fill it with smarties/m&m/haribo etc! I'm also going to run popping candy through the layered frosting :)

BUT. She has now told me her favourite colours are yellow and pink so I'm thinking more about the lemon cake because I do make a pretty spectacular one. Hmmmmmmmm

The finished product!

4 layers of vanilla cake, cut through with lemon curd, and pinata's with skittles, m&m, smarties, rainbow drops, haribo.... Then crumb coated with strawberry frosting and covered in fondant :)

7 HOURS


My carpal tunnel is so bad now, look at that messy piping xD
