Just from VIII? Probably Leviathan. He looks cool in that game.

DIABLOS!!! He is, in my opinion, one of the hardest to get in the game, but once you have him, and he's all levelled up and all his abilities are learned, he is unstoppable. Plus, he looks really awesome! I'd have to say he is my favorite GF/Eidolon/Aeon in the entire series of FF games I've played (FF7, 8, 9, 10, 10-2)...although, Shiva's presence in FF10 is pretty damn cool too.
