You gotta go find bahumut. You might try looking at eyesonff.com for some refrence on Bahumut. Long story short, you find bahumut, he sends you to the castle of ordeals, you get a "badge of courage", and he class changes you.

There's a temple of trials or something on the northeast continent, finish that, and then find Bahamut, he's on one of the islands east of the northwest continent. (Have to have the airship to get on them)
