Stratoavis has 320,000 HP. You're characters obviously aren't strong enough so build up their stats a bit more.
Alternatively you can summon Yojimbo, keep paying him whatever amount you want, and have him attack for you(I am not talking about Zanmato here). Due to Yojimbo's high evasion, Stratoavis will always miss. This method is slow but almost guaranteed.

Riku's trio of 9999 and Blitz ace, attack/status/whatever reels also put a nice dent in anythings HP

I think you mean AP, yes it does.
The great thing about trio of 999, is for three rounds (might be actions), everything you do is worth 9999. Which means that every single hit in blitzace will do 9999 damage. Think about it. Lots of damage.

Yeah! Just summon Yojimbo and juts keep on pay him 1 Gil. The slow but sure way. The bird will always miss on Yojimbo. I've tried it myself. =)

Is there anywhere we can find stats on the monsters there? Like who gives you what when you beat them, what they use, what to use against them, and how many damn HP they got?
I've beaten Stratoavis and the one made from all the Calm Lands monsters, those weren't too hard. Then I tried a couple others (the Marlboro thing, one or two others), and they slaughtered me.
I tried Earth Eater too. What a bastard.

Here's a link to a site with a bunch of FAQ's-- including the apparently much-needed Monster Arena FAQ.
Final Fantasy X FAQs and Guides (http://www.gamefaqs.com/console/ps2/game/197344.html)
I bet there are already several walkthroughs on this site, but posting a link to more of them will help some people so, why not?
