Is there any way I can play Final Fantasy 11 without playing it online? Is there a single player quest or something? Could I just vs the cpu instead of online players? Thanks.

No, Final Fantasy XI is an MMORPG and as such it is made to solely be played online, there is no way around the monthly fee either- well beside credit card fraud.
