HOW DO I BLOODY DELETE SONGS?! Do I have to manually go in and remove them, all the while deciphering that 4 letter code (I can't empirically see a rhyme or reason to it...) or is there an easy way (ASIDE from starting anew.)

Delete them from your iTunes library and update your iPod.
