Soft reset is where you hold down Start, Select, L1 and R1, L2 and R2. It resets the game back to the first ever screen you get when you start playing the game.

and yes, found that out way too early on. One of the biggest joys of Squenix games was that i could curl up in my bed, clear on the other side of the room from my PS2, and instantly reload any save via the glorious L1 L2 R1 R2 Sel Start soft reset, or at the least a "Load Game" command at a save point. Now i get to remove my undressed self into the biting chill of my bedroom and trapse across the room to a reset button. Well, I suppose they had to fudge SOMETHING in a game as otherwise glorious as this. though... they could have settled for Atlantis. that was pain enough.

Yeah, that annoyed me. I don't see why they had it in the original but not in II. Perhaps forgetfullness, or just not feeling like going through the hassle, especially with such a highly awaited title.

Hold L1&2, R1&2, & Select, then hit start to reset to the begin game menu.

I still find myself unconsciously trying to use it. The only way to quit the game is to choose quit after Sora loses his HP. What a gigantic oops to make in such a stellar-looking game.
