I admit, I got kind of turned off by the game because I believe that leveling your characters a lot and then just easily beating the next level. Is leveling your characters a thing you gotta set a time for, or couold you easily beat the game by just leveling as you go along?

You can easily beat the game by leveling as you go along. The only reason to level in the Kingdom Hearts series would be if you want to do some of the optional stuff, like beating Sephiroth or completing Arenas. To beat the game though, you certainly do not have to level.

Yeah. Tetsuya Nomura purposely made this game "user-friendly" (as seen by all the tutorials this game had!). There were complaints that the first game was too hard. They made KHII managable for people who just wanted to get through the storyline without really battling or going through the optional battles. Even in Normal mode the game is effortless.

 People actually found the first one hard?
Anyway, no you should never actually have to set aside time to level. I did spend some time leveling up my various forms, which probably bumped me up an extra ten levels near the end, but even without that I'd be around level 50 and most likely still having an easy time with the game.

If you're playing normal mode, so long as you do the worlds in the proper order you should never have to level.

Nope. None that the game records. The only experience you get, is not measured by any number, but rather, the experience, of beating one of the optional bosses, and how to fight him in the future, if necessary.
You also get a nifty +1 Drive Bar Maximum.

You forgot the strongest keyblade in the game, Fernir, and a kick ass cutscene of cloud and sephy fighting

I never leveled up until after I had beaten the game and wanted to complete all the side quests.

Its an RPG. Of course leveling is important.
Of course, its also pretty easy to level in this game, even on Proud Mode. All you have to do is take on the worlds in order, and you can pretty much progress at the speed of the plot with no problems.
Personally, I took an occasional time out to max out my forms as soon as I got each one. Made the game that much easier having high jump and aerial dodge as soon as they were available, but you could easily finish the game without doing so.

To speed up leveling, I used the ability I got near the beginning as Roxas which doubles your exp if you're near death. Right now I'm 10 levels ahead of the game and have maxed out the levels of all my forms and summon. I am close to level 40 at Port Royal. I am also on Proud Mode. This game is easy, but I level up a lot b/c I love this game. If you keep Sora at low HP and turn off your teammates' abilities except for limit, the game is still pretty easy (although sometimes it gets frustrating) as you only spend a few minutes getting thousands of exp at places like Disney Castle or Timeless River.
KH 1 was a little harder I think, even though I leveled a lot. One time I stopped leveling up Dragon Quest style for a while and Ursula was kicking my butt, but I beat her after a couple tries.

Leveling is necessary for most KH gamers... but then they're are the few that can beat Sephiroth at level 30, and 40 on proud. The best I managed to do was beat him at level 50. Of course my friend (Impulsion not on this site) can beat him at 40 and I believe he is good enough to do it at 30... oh yeah he doesn't use the Berserk Trinity Combo.

indeed yes...sometimes even square helps...god forbid you use the triangle button *egasp*
leveing in easy and normal mode is silly but in proud mode its another story. the hades cup is birch if you don't level a lot...seriously...the last ten rounds are REALLY hard in that tournement
