Sword= More strenth

Staff= More magic

Shield= More life

I chose the staff and gave up shield and I think that it meant for me that I got like an extra magic block thing and I got a little more strenth too but giving up the shield made it so my life wouldn't grow all long.

It depends on how you want to play the game.

KHI only: You both gain a power, and lose one. While the game does not have a noticable difference between the paths chosen, it heavily affects how you end the game, as the stats you choose to develop become permanant and unchangeable. Each has its own bonuses, as well as drawbacks. Abilities thats support your path chosen are learned based on levels, yet have a surprisingly small impact on gameplay.

If you sacrifice Defense, you will take alot of damage very quickly, unless you avoid fighting/getting hit entirely. You also lose an accessory and item slot. If you embrace defense, you will gain an accessory and item slot, as well as be able to take punishment. HP is not determined by this attribute.

If you sacrifice Magic, you will not be able to use many support abilities with as great efficiency or as often as if you left it alone. You will not have as much MP. If you embrace Magic, you will have increased MP and Magic damage, and be able to nuke your spells quickly and with deadliness.

If you sacrifice Strength, you will not be able to mash the X button to deal damage as efficiently as if you embraced your destructive powers. You will not have as much HP or Attack damage. If you embrace Strength, well... just hit the X button.

KHII only: You don't sacrifice any qualities, you only develop them.
HP is static, MP is static, Strength/Magic damage are separate stats, and Defense is, well... Defense. Attack, Defense, and Magic Ups are available throughout the game by Synthesis, so taking a path only affects how you play the game the way through, not how you end it. Abilities thats support your path chosen are learned based on levels, and heaviliy influence your decisions in battle.

If you take the Defense Path, your Defense stat will skyrocket across the game, as well as learn abilities such as Second Chance and Once More much earlier than the other classes.

If you embrace Magic, your Magic Damage stat will skyrocket across the game, and be able to nuke your spells quickly and with deadliness, as you abilities provide you the ability to do.

If you embrace Strength, all you'll be doing is hitting X & /\. Maybe the Square once in awhile.

It all depends on your personal style of playing. Read through Tavrobel and just pick which path you think you're more suited for.

if i remember correctly, choosing the shield and giving up the sword gives you the most even stats at the beginning of the game

In KH1, I picked up the shield and gave up the sword. Many fights were easier for me since Sora was able to take a lot more hits, and he got Second Chance quite early in the game too. My big brother took the sword and gave up the shield, and there were times when he was stuck with some bosses, and even I had trouble helping him with them because getting hit meant Sora taking a lot of damage.
