Making poutine can be difficult. Most importantly, you have to find good quality fries and find a really good gravy recipe. (It will be very tricky to find good gravy powder, so I wouldn't bother. You'll probably have to make it from scratch.) Remember that the cheese should be mozzarella - shave up some stringy pieces and melt them over the fries, or just buy mozzarella cheese curds.
