That was actually done on purpose. Since the shipping is heavily based in generating children units in this game, and the mothers control which child you get, the men outnumber the women so that you aren't forced into a pairing you really don't like just to get a child unit. "Well, Kellam's the only guy I have left unmarried, I guess I have to pair him with Miriel, just because I want to get Laurent". I'm not saying it's an ideal solution, but it's why the men outnumber the women. It's also pretty clear why there are no slash pairings, I think. Much the same problem, you could block of children characters way too easy. On the other hand, there is the Hubba Tester in the Extras. Basically a giant crack-fic generator, if you're interested in messing around with it, and it does support same-sex matchups (in the case of two women, it really, really supports them).
It was just a perfect match in my eyes I just love this aspect of the game, how basically any ship you want is valid, so shipping wars basically become a moot point But OMG, if you pair up Lon'qu with Lissa, the fact that Owain's a Myrmidon (and actually quite similar to him in looks) jest gets more awesome XD I kinda wish this game allowed slash pairings. So far I have more dudes than girls, so I can't pair up everybody I would so pair up Stahl and Kellam if I could, but I'm pretty satisfied with how I paired them off anyway (with Cordelia and Miriel respectively).
Owain was voted one of the two best male child characters in a fan vote in Japan. This got him (and the other winners, Severa, Lucina, and Inigo) special scenes in the Hot Springs Scramble DLC map. I usually don't put Lissa with Lon'qu, just because Lon'qu is awesome with everyone. I think Olivia + Lon'qu is my preferred, followed by Cordelia + Lon'qu.

Each map rewards you with a character. Marth is special though. He's a Lodestar, which is a unique class, restricted only to Marth (he's the only DLC character to do this). Like other unique classes, it is a level 30 class with no promotion. Still, the real huge reward for that pack will be for completing the third map in it. That one will give you the All Stats +2 scroll, which is one of the biggest no-brainer abilities in the game. The really interesting thing about the characters is not their starting stats or levels, though I think they tend to come at about the point the map was "designed" for, so a Level 8 team would be the one they expected you to take when first doing that Champion map. The real benefit is that, unlike your normal team, they can become ANY class, just like your Avatar. And some of them have unique skills that aren't normally available to their gender (such as male characters with Galeforce or Dual Support+, or female characters with Axefaire or Rally Strength), or with skills not normally available to normal units (like Marth has Charm, which is a Lord skill, and Aptitude, which is a villager skill, despite not technically being either, nor being able to switch to either). The downside to them, however, is that they can't form Supports, which means they can't get the full benefits of Pair Up, or of the Support System, both of which are huge. So while they're more powerful, and can fill any slot in a roster, they tend to be slightly less efficient due to the lack of Supports. On the other hand, you can save them (and your Avatar) to your Avatar logbook, which will allow you to buy him back in any later game you play for a gold cost, complete with all skills he's learned and all stats he's gained (the more powerful the unit, the higher the cost, but with Golden Gaffe, it's nothing you can't farm).
I got the champion pack! And I got Marth. He's level 8 where all of my other characters have already changed into their advanced classes
I sort of obsessively max my characters, so you'll notice a few trends in my skill setups. That said, I'll try to give you the best options I can. For Olivia, switch to Pegasus Knight, and promote to Dark Flier. This gives more stats, and teaches her Galeforce to pass to her son. Then go for Myrmidon and Either promotion. As a Dancer, she can use Swords, so Swordfaire will benefit her. Astra and Assassination are both good if you want to give her an attack skill, and Vantage can be really helpful on relatively flimsy characters. I have her set up with All Stats +2, Limit Breaker, Special Dance, Galeforce, and Astra, but those last two could easily be traded (she makes others move twice as a Dancer, so she's the one person with an excuse to not take Galeforce). Nowi doesn't have a great class set, unfortunately. Mage to Dark Knight for Lifetaker, and Wyvern Knight for Strength +2. Then just build her stats, drop her back to Manakete, and give her Wyrmbane, All Stats +2, and Limit Breaker. I think Deliverer is her next best. Focus after that, as Quick/Slow Burn aren't too appealing to me, and she doesn't get an attack activation skill. But max her stats and give her a Dragonstone+, and you won't care. Panne also doesn't have a wonderful class setup. Go Thief, then Assassin. This gets you Assassination, her only attack activation skill. I took Wyvern Rider to Griffon Rider for Deliverer, then back to Taguel with All Stats +2, Limit Breaker, and the incredibly powerful Beastbane. Strength +2 works as well. Basically, I really love stat boosting, so everyone has All Stats +2 and Limit Breaker. All Stats is Easy, but Limit Breaker takes a lot of work.
If Panne, Nowi and Olivia work best as their special classes, what do you think I should do with them after they max those out?
Nope, the others are unavailable, just left over as you thought. You're right in that min-maxing is easier on a second play after you have more experience. My general min-maxing advice: Galeforce is the best skill in the game. Any female who can become a Pegasus Knight can become a Dark Flier and learn Galeforce. Do so, and try to pass that on to their children, especially any who have sons. Also, Gaius is best paired with Sully, Nowi, or Tharja.
