I really think you'll like it. There's a lot to love even if you're not a fan of the mushroom kingdom stuff. It's super bright and colorful, the game doesn't treat itself seriously at all and there's a lot of nonsensical humor on top of the super witty dialog. The gameplay is fun as well with each enemy acting unique. Heck, even the monster designs are often hilarious. The game is easy on its own, but I think there's an easy mode anyway so you should have no trouble.
