It so much funner smurfing with my party using clever tricks with monsters that should be to weak to fight them effectively due to low CR. I had my level five party getting jumpy in a with two burning skeletons (1/2 CR each) and a CR 3 Zombie creature with one ability. I feel accomplished.

Its still technically rigging the game against them since you're making the scenario to take advantage of their possible failings.
I like to kill them off slowly, and I like it to be when I take advantage of their failings. Not because I rigged the game against them.
