I really advise against that. This is the one series where it's important to go against the order. Trust me on this.
But I wanna play them in order
But you'll have a bad opinion of the series and will be unwilling to pick up the rest of the series, which is actually good. Persona 1's okay to have a look at if you're really interested in the series roots. By itself, I wouldn't recommend it at all, especially if you want to get into Persona at all.
