I guess it's probably because it's still possible to play and enjoy in Japanese since it's a racing game which doesn't require much reading unlike RPGs. Although since they have unlockable character profiles and episode summaries of the anime it would be nice if someone did a translation of it.

Yeah. Shooting weapons at other racers is always fun. F-Zero doesn't have any weapons. Although you can attack others by side swiping them while hitting the L or R button twice (usually a 1 hit KO if you get a clean shot) or by doing a spin attack (not as powerful but easier to hit with).
Sure. However I did enjoy Mario Kart and Diddy Kong Racing.
