I think peach makes her sounds more pleasant. Toadstool reminds me poo poo for some reason.
In the U.S. on the NES she was referred to as Princess Toadstool (as well as on the Super Mario Bros. Super Show). Later on, I think Super Mario World, they decided to use her original name, Peach.
