  5. Making poutine can be difficult. Most importantly, you have to find good quality fries and find a really good gravy recipe. (It will be very tricky to find good gravy powder, so I wouldn't bother. You'll probably have to make it from scratch.) Remember that the cheese should be mozzarella - shave up some stringy pieces and melt them over the fries, or just buy mozzarella cheese curds.

    Hopefully you'll get lucky and actually hit a french fry stand that really knows how to make a good poutine.

    A few signs that you have a good poutine:

    -Thick fries - no wimpy McDonald's style fries, without added salt (the gravy should be salty enough on its own).

    -Gravy that is somewhat thick and viscous, but manages to taste enough like home-made gravy without undue salt. Also make sure that the gravy doesn't drown out the fries and cheese; you may want to ask the server to "go easy on the gravy."

    -High quality cheese curds or stringy cheese.
