Yep, they are their on class of demon, but you can actually make them in the Cathedral of Shadows as long as you have the material components for them and have defeated them. Matador and Daisiouji are good early ones, Hell Biker is okay, the Four Horsemen are awesome and Mother Harlot and the Trumpeter are great endgame monsters. Course fighting the Four Horsemen is a pain... Especially the Pale Rider, he appears outside save points once you trigger the event flag to get him to fight you.

Matador is like the first real beef gate in the game. Thankfully, the other Fiends are all optional I believe except maybe Hell Biker, but as long as you go into that fight with Fire defense, he's a joke compared to the others.
