To be honest I don't really think I have a favourite "townsperson".

Any of them. Old guys are cool.
Any of them kids in Toy Town (in the Whisperwind Cove in DOA), especially Sora (I just like the reference).
The dancer in Cornelia (I think she originally had a name), whom I thought was a prostitute at first. I still refer to her as such.
Hmmm.... I like the guy who sells me an esper in FFVI, because he's actually more useful than random banter.

Although it's not an FF game. I love the townspeople from Resident Evil 4 I must say. (The Village Ganados.)

A lady in Crescent Lake (FF1 nes), near the Circle of Sages, says, "LIGHT WARRIORS, You can do it!"
