My Endgame Party, purley for...well, the end game, was:

Luneth: Ninja
Arc: Dragoon
Refia: Devout
Ingus: Sage

I had a Sage aswell as a Devout mainly so i could revive and heal on the same turn.

However, my fav party would be:

Luneth: Ninja
Arc: Dragoon
Refia: Devout
Ingus: Summoner

My favourite party that I used end-game was:

Luneth - Dark Knight
Arc - Sage
Refia - Devout
Ingus - Knight (Ultima Weapon + Excalibur = Win)

Now I'm replaying the game again so I might get a different favourite party.
