how do you get the jobs like the sage and ninja jobs

If you're playing the Famicon(Nintendo) version, you get them in Eureka.

If you're playing the DS version, you get them after you defeat Titan in the Ancient's Maze.

After you've passed those four Seals or whatever, your next destination will be The Ancients' Maze.
There's a small room right at the entrance; go in there and beat up the boss in there.
The Jobs are there. :D
