Imagine saying "ZOMG" in real life. It would go like this:
ZO MY GAWD!
Now, imagine saying "lol" in real life, in a way to simply say something is funny. Now add some incorrect grammar. "Lolz". This would likely be like saying "durr", but when someone says an unfunny joke. Get it?
So, Zomglolz would be like saying sarcastically that something is not shocking OR funny.
Why not include the letter z in fun games? It looks so lonely in the bottom left corner next to the x.

LOLZ (or rather, LULZ) is a plural. and on the internet, z > s.
ZOMG came around from the proximity of the Z and the left shift key.
I think the idea is that you're making fun of people who type stuff like 'celebz, hottiez OMG', so ZOMG is where you were just saying something that ended in z and it liased to join the OMG.
or just taking a z and omg which are common in internet and combining them. see: omgz
