One time I found this guy who covered Japanese songs in English with really lame translations and cheesy voice. It made me want to cry.
I found this one girl who plays guitar on youtube who I really like. She has some original stuff but also quite a lot of covers such as jack johnson, death cab for cutie...my favourite is her version of "woke up new" by the mountain goats, it's a really lovely version with her own take on it.

I like this lady doing Break The Ice. Not only does she sing it really well, she even recognizes that Britney's lyrics are ridiculous. +1,000

I never seek out covers on Youtube, but I have a friend who's a bit Modest Mouse obsessed, and this acoustic cover of Float On he's fond of is really good.

I prefer song fandubs to covers, and some are really great. They suspended MilkyCabbage which pisses me off to no end, but StrawBellyCaky and Japankati do some good ones. Of course, they're German, which might not suit your tastes.
