now me being the worst stratagist ever, i couldnt do this, i tried, so lets see if you can do it.
once you start playing, do not get shiva and quizacotl, even though your forced to get Ifrit, try getting as far as you can get with only one GF. i got passed the field exam and the game got a little harder but, i gave it a good run.

I did a challenge like this, except I just never junctioned, which basically means I could only attack, limit break, and flee. I got all the way to the end of Disc 1, but Edea kept killing me.

Shiva and Quetzacotl are forced upon you when you leave Garden for the Fire Cavern. You can't miss them or Ifrit, so three is the minimum.
If you don't junction then the gameplay becomes very basic. You'll be using limit breaks on everything you see (Quistis' Degnerator is invaluable).
You can make things easier if you junction GFs for the purpose of learning refining abilities but don't junction any magic to stats. Then you can refine items and cards into stat-boosting items, enabling you to increase your stats while avoiding magic junctions.

Yeah, as far as I know it's impossible not to obtain Quezacotl & Shiva before you go to the Fire Cavern.

I beat Edea using that setup but she got my hp down to like 100 and when i woke up as Laguna he and Kiros died everytime they tried to travel through Winhill.

Yeah you just play cards an insane number of times and you can refine all weapons in the first disc, apart from Irvinnes 3rd or 4th so I hear, then you can just use the lionHeart everytime and bam you win ;)
