Oh man, that's a tough question. I am eternally and terribly in love with the exclamation mark thing that appears above the character's head in IX when they found something (and the sound when you find an item). That's pretty up there.
Elixirs, Mogs, and Chocobos.
Squall's hair, gunblades, the Ragnarok (airship), Contain materia and the menus in FFX-2.
There's more, I'm sure.
Celes's opera dress, discovering Wutai hidden away, Gold Saucer, Highwind, When Rinoa is having a nap on the train, space cuddling, triple traid, Garnet and Zidane having a late night chat in the black mage village, Freya and the others dancing, Zorn and Thornes talking, Spiral eyes, up the duff Lulu, Fran inuendo's delivered by Balthier, B'gamnan, Wayfarers, Running around free as you like in Nabradia ruins,

Chimera. Bahamut. Ragnarok(sword). Omega/Ultima weapon. Using Fire,Blizzard,Thunder spells for the first time.
