So I'm taking a nutrition class, which involves monitoring and changing my diet. So I'm looking to grab a few healthy recipes. While this is not particulary my biggest issue (more has to do with my irregular eating habits, low total calorie amounts and the fact I live off a steady supply of booze and coffee).
Specifically, I'm looking for some great all-veggie meals and dishes o try and see if I can't start eating a little better. I'm pretty good with fruit and I'm cutting back on some meats. I just feel I need more variety with some veggies so I can kick this awful mentality that they are simply a side dish.
About the only veggie I don't care for is squash, it just illicits some gag reflex with me, but I'm pretty open for anything else and I won't necessarily shoot down a recipe that calls for squash. I would like to limit salads though. I'm looking for some actual vegan/vegetarian recipes. Thanks for sharing. :jess:
