So since I didn't see a topic like this anywhere recently, what are some of your favorite video game soundtracks? Let's leave FF out of the equation because we all know about it. I'd like to get to know some OSTs I didn't know about before.
I'll start with Umineko no Naku Koro ni. So many composers, so many talents, so many great tracks. It goes to huge lengths in deepening the atmosphere and conveying the emotions. Not to mention it has several really damn awesome tracks by composer "zts" that I listen to on a regular basis.
One of my all-time favorites would be Golden Slaughterer.
I just love this track. It's the point where Umineko makes it clear that things aren't going to be bright and happy... ever. I could also totally imagine it playing during the fight against Ultimecia in FF VIII. The track also has several remixes that are all equally awesome.
Another favorite of mine is Fishy Aroma. It has this incredible creepy feel to it.
So what about you?

Night Fury
The Mass Effect series has some gorgeous epic music, this is one of my favourites though.
And although the Dark Souls II soundtrack is, overall, mostly forgettable imo, the theme for Majula is really beautiful and haunting and appropriate for the setting.

I second Symphony of the Night.
Metal Gear Solid, Evil Zone, BattleTanx Global Assault, Resident Evil, and WCW vs. nWo World Tour are some of my personal favorites. I'm too lazy to post any video links at the moment.

90s, oh yeah!
Pretty much makes Dominion my favourite game mode in LoL. (and yes that is a full 14 minutes of unique, non-repeating music)
As for a whole OST... the Warcraft Universe, through and through.
Yasunori Mitsuda (mostly) - Chrono Trigger & Cross
Hiroki Kikuta - Secret of Mana & Seiken Densetsu 3
Motoi Sakuraba - Star Ocean 3 etc.
Yoshitaka Hirota (mostly) - Shadow Hearts
Yoko Shimomura - Super Mario RPG
Koji Kondo - Zelda: A Link to the Past
Kenji Yamamoto & Minako Hamano - Super Metroid
Yumiko Kanki & Naoto Ishida - F-Zero
Sue Kasper - SimCity 2000
That's probably a fair kickoff selection. idk.

Digimon World had a great sound track. Each area had a day and night track. This is my favorite.

I feel like the themes of the three witches Beatrice, Lambdadelta and Bernkastel all would make great boss themes/final boss themes actually. And all three of them are also among my absolute favourites:
Mirage Coordinator:
The Executioner:
I also really like Dead Angle:
...and Hope:
...and several others.

Forsaken Lover
Fans of SO3's soundtrack should go play Baten Kaitos. It is also by Motoi Sakuraba but is superior in every way.
One of the greatest battle themes in JRPGs (SPOILER)
One of the most awesome boss themes in JRPGs (SPOILER)
And just plain, flat-out one of the most beautiful tracks ever. (SPOILER)
And while it's great to see Chrono Cross getting the love it deserves, what about Xenogears? I'd say its soundtrack rivals CC's.
Moving on away from JRPGs however, anyone ever played a game called Onimusha: Warlords? It was fantastic and the music was a big reason for that.
One of the greatest Final Boss Themes Ever. (SPOILER)
Such a uniquely soft and gentle (and beautiful) song for a blood-drenched action game (SPOILER)
Kaede was doing the Ninja With Ridiculously Colorful Outfit thing long before Naruto, and she had such an amazing theme while doing it. (SPOILER)
