Various covers of the Dollet landing always put me in a great mood.
I love most of the soundtrack. The music that plays at the Gardens, Dollet, Timber, Deling City, when the Sorceress appears, and the different battle themes.
Favorite is probably the first song you hear in the opening.
The Castle, followed by The Extreme and The Stage is Set. But really it would be hard to find tracks on this OST I don't like.
Dance with the Balamb-fish, Breezy, Balamb Garden, Ultimecia's Castle, Fisherman's Horizon, Force your way, Man with the Machine Gun, god so much more. I love the soundtrack.

Probably Blue Fields. Yes, the world map music that you either love or hate and there is no in between.
Lately I have mad Deling City's theme stuck in my head for no real reason. I haven't played through FFVIII in several years, but I really dig that theme. It brings me back to positive memories I have around the time I first played the game (when it was brand new) for whatever reason.
I have four favorites.
The orchestrated version of The Oath. That is epic-ness just waiting to happen. The Landing. My Mind, and SeeD.
Gosh...it's funny. If I'm about to write or illustrate a dramatic scene, I listen to both SeeD and The Oath to get my brain flowing.

I loved fighting Diablos with Laguna's party BECAUSE of their fight theme. Great. Now I feel like playing this game again. Gosh, I really enjoyed the battles. ...Oh and "Love Grows," both versions.
See now, I just remembered one more, "Drifting"---and with that, I'm officially done. No, wait, Shuffle and Boogie, too...>_> Okay, "Junction" ---Alright, how about this?

I'm a sucker for light songs. I also really like the full version of the song garnet sings in IX
