I expect JENOVA to sweep this, but I've always been very fond of FFV's Decisive Battle myself.

Jenova Absolute deserves more love than it gets. Same for The Legendary Beast.
Dammit, too many good ones. Battle on the Bridge, Battle to the Death, J-E-N-O-V-A, and Man with the Machine Gun are some of my favorite battle tracks in the series...
The Dark Messenger in FFIX.
Clash on the Big Bridge has always been my favorite. Hunter's Chance is great too.
