I don't know if you'd call it "beautiful", but Saving Private Ryan has to be near the top of the list for the way it shows that war really is hell.
I'm desperately trying to think of how Strider linked "Saving Private Ryan" with "beautiful" :(
Hmm. Fellowship of the Ring, Waterworld (because water is pretty)... I dunno. I can't think of any superly beautiful movies right now. :(
Crouching Tiger, Hidden Dragon. Beautiful scenery and the fight scenes are almost balletic.

Scarface.
Scarface is unique, but I liked Blade Runner's visuals more. They didn't rely on special effects like so many other movies.
Girl With a Pearl Earring. Slightly boring, but vibrant colors punched through the Catholic exterior and brought out the beauty of a painter.
If animations count, then spirited away or princess mononoke.
If not, then Kill bill vol 1.

Sort of reminded me of Crouching Tiger, Hidden Dragon, which also is a beautiful movie.
