The PS1 origins of FFI and II and the DoS GBA version are just about the same, the only difference is the added features. The GBA version has an extra play mode once you beat through FFII, and the FFI version has 4 added dungeons and many added bosses within those dungeons.
Whilst the PS1 version features some of the original artwork of each game, and also a really neat cut scene in the beginning for FFI. Not very lengthy or all to big, but pretty neat none the less.
I think I just about covered the difference in the FFI and II versions.
As for the others. FFIII as of yet is not released outside the original NES Japanese version. So your best bet is to just either get a ROM of it somewhere (the EoFF main site has it I do believe) or wait for the remake to come out, but I'm not sure of when it will be.
FFIV you can get in FF Chronicles, and FFV and VI are both featured in FF Anthrologies, both Chronicles and Anthrologies are PS1.
In my opinion though as to what to get, I would say PS all the way. Although you would have to deal with some rather slower then average load times, but eventually you just ignore them, while the GBA versions don'twon't have any loading time issues. But I find the extra features on the PS versions to be a bit nicer on some of the games. (In particular I enjoyed the artwork of FFII on the PS1 version)
Well I hope this helps you in reaching a decision.

IV, V, and VI as of right now you have no choice but getting the PSX ones unless you wanna find and buy the originals. As for I and II I personally liked Dawn of Souls better. Solely, because it had gameplay and in-game differences from the originals, but I'm always nostalgic for the original. Which one you should get is up to you. For both games the difficulty (due mostly that they changed the systems, stats, etc) is as follows, starting with the most difficult: Original NES/Famicom/MSX(:P I actually own this one :P) -----> PSX Origins -----> GBA Dawn of Souls.
GBA version is extremely easy, because it plays like on an emulator. Meaning that you can Save/Load anywhere you want. The system and monster stats have changed so much that the main original parts of the games are a cakewalk.
My suggestion: get the NES version :P it's classic and its the only way to truly experience the first two FFs... I say do it on an emulator, because I doubt you can find a working and/or clean FF1 and an NES very easily, and the original FF2 of course is in japanese (Yes, I own it, and a working Famicom).

Avoid the VI PSX version if you can, it's horrible...it has very long loading times.

Finding a FFIIIus cart is not easy, and they tend to go for higher prices than people want to pay for an "old" game on ebay, and even moreso in retail. The GBA version I'm willing to bet is going to get a whole new breed of players interested in it.

*wishes he hadnt sold his NES*
I still have a working SNES though...
My NES probably woulda worked still too, seemed I was always the one on my block who didnt break his game systems or just had the luck of them not going bad...
Course some of my neighbors had gum, candy, chocolate, etc... in their controllers.... so......
Gotta protect ya hardware! :)
But at least I have every FF for the PSX(1-10 minus 3, plus tactics, and yes i know 10 is PS2)
Some day im not busy ill play 2, 4, and 5.... /sigh.
Also gotta get off trying new FF1 parties to do that though.
Ok, im a FF1 addict.
PSX games you should be able to find used at a local gamestop or EB.
Sad that they dont make these gems anymore, either on NES/SNES or PSX.
Yea... im a little weird since I look foward to playing FF4 more than .... *tries to think of some new game that came out for PS2 or Xbox*
well.... nm, I should stop rambling.

I say just buy every version of every FF game that you can... I did :P I dont own FF8 anymore though.. hated it so much I flung the discs from my roof like frisbees... they get pretty good distance :P
hell FF1 I have:
2x American NES cartridges (one I play with and one still sealed in the box)
1x Japanese Famicom cartridge (Sealed in Box)
1x Japanese MSX disk (mmm... 12bit goodness)
1x Wonderswan Color version (Came in the bundle with FF1 and 2 and the WSC to play them on, this one's Japanese too. Like Origins but came out first.)
2x Origins (American and the Japanese 2-Disc)
1x Dawn of Souls

I'd say get the DS because there are going to be new features in the games, such as FFIV being able to choose a final party and new dungeon or whatever, so I'm sure FFV and FFVI will have something as well

FFIV, V and VI are coming out for GBA, not DS. Only FFIII is coming out for DS.
